Another Easy Dinner

Cooking Light is going through it's own healthified version of Semi-Homemade.

I like it.

Here's another quick evening meal that was delicious, low-cal and (importantly) fast.


Fish Stick Tacos

My revised version below

  • 6 frozen fish sticks
  • 1 c packaged coleslaw shred (carrots and cabbage)
  • 1 T low-fat mayo
  • 1 t lime juice
  • Dash fresh black pepper
  • Dash kosher salt
  • 4 corn tortillas
Bake fish sticks according to package. Combine mayo, lime juice, salt and pepper. Add mixture to coleslaw shred and combine thoroughly. Warm tortillas then build your tacos!
