Why on earth did I put this on my 101 List?
Anyway, I needed a side dish for a steak dinner and thought I'd give an easy oven roasted corn recipe a try.
In the interest of full disclosure - I hated this recipe. I'll tell you why later.
The original recipe is here. I'm going to skip writing up the recipe and just give you a how-to instead.
Pour frozen corn on a baking sheet.
Add fresh cracked pepper and kosher salt. Roast under the broiler for 5-10 minutes.
That's all there is to it.
Now - I hated this. I didn't think the corn had much flavor and it wasn't crisp-tender. Honestly, it is just as easy to oven or grill roast fresh corn-in-the-cob. It's even easier to cook crisp-tender corn-on-the-cob in the microwave!
And that's why I won't be making this again.
HOWEVER, the corn was nice as a side dish for our grilled steaks. Topped with those delicious caramelized onions that I made earlier (check out the how-to here).
