The great debate, as always, was over what to bring. Here's the pre-Friday scenario: still too busy to grocery shop, the house is a bit of a tip while we're trying to get things organized and I had a work-related evening party the night before.
My serving solution? Mini-quiche and cinnamon rolls (baked from frozen to save time). What a yummy morning blend of sweet and savory!
Mini-Quiche
- 2 pie crusts
- Eggbeaters
- Filling of your choice
Spray 2 mini-muffin pans (12 muffins in each, 24 muffins total) thoroughly with Pam. Cut pie crust into circles, press each into muffin tin. Place approximately 1 T. of filling in each, top with 1/2 T. Eggbeaters. Bake at 350F for 15-17 minutes or until filling is set.
For my office, I made two different types of mini-quiches:
- Bacon-green onion - use 1 t. real bacon bits and 1 t. finely sliced green onions, plus 1/2 t. shredded sharp cheddar cheese
- Mushroom-pepper - use 1.5 t. chopped fresh mushrooms and 1.5 t. finely diced red, yellow and green bell peppers, plus 1/2 t. shredded colby-jack cheese.
looks devine! I had a client come in today and buy me and another co-worker breakfast as a thank you for loving on her dogs during this weekend. Made me love her two brats even more. lol
