Comfort Food: By Special Request

Feeling cold? Feeling too lazy to cook? In the Hayley House, when the cold and lazies strike it means that The Boy is cooking dinner (take-out) or we're enjoying crock pot cooking.

Here's one of our Comfort Food Favorites. Everytime I make it, we get requests from folks smelling our lunch leftovers!

Chicken and Dumplings
  • 4 skinless bonelss chicken breast halves
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 1 onion, finely diced
  • 10 oz. green peas
  • 1 (10 oz) can refrigerator biscuits
  • Celery tops (with leaves) - optional
Place chicken, soup, onion and peas in slow cooker, fill with water to cover (plus a little). Cover, cook 5-6 hours on high. If using celery, add with other ingredients, but remove before adding biscuits. Prep biscuits by flattening slightly, then cutting into quarters or fifths. About 30 minutes before serving, add biscuits. Cook until no longer raw in center.
