The Boy was busy mowing the lawn and I wanted a cooked steak to incorporate into our dinner.
No problem - when the grill master's away, pan searing is the answer. Here's how to do it.
Step One - season your steak. I didn't have time to marinade, so I applied a spicy rub that we like to use on roasts.
Step Two - heat 1 T olive oil in a cast iron or heavy skillet over medium heat. When warmed, add steak to pan. Do not touch the steak for 3 minutes (for a 1" thick steak) or 2 minutes (for a 1/2" thick steak). Turn the steak over and do not touch for another 2-3 minutes (see earlier guidelines regarding steak thickness).
Step Three - place seared steak on a foil-lined baking sheet. Cook for 4-6 minutes (depending on steak thickness) in a 350F oven. I also added sliced onions to quickly caramelize them at the same time.
Step Four - slice steak against the grain, removing any fat.
Voila! Perfect, easy-to-prepare, medium steak (gotta love that warm pink center!).
