Comfort without Discomfort

There's nothing like comfort food when you're stressed.

But there's also nothing like the discomfort that comes when you've eaten too much comfort food. Not good.

And that's why I've figured out a healthy way to make a very yummy comfort food - Chili Mac. Delicious and, somewhat more, Nutritious.

Less Guilt Tex-Mex Chili Mac
  • 3/4 lb ground sirloin
  • 1 t garlic powder
  • 1 t ground coriander
  • 1 t ground cumin
  • 2 t chili powder
  • 2 c fat-free, low-sodium beef broth
  • 1 c water
  • 1 (10 oz) can Rotel
  • 8 oz uncooked whole-wheat elbow macaroni
  • 8 oz Velveeta
Cook beef and next four ingredients until beef is barely pink. Add broth, water and Rotel; bring to a boil. Stir in macaroni; cover and cook 10 minutes until macaroni is done. Add Velveeta; stir until melted and smooth.
