Winter Recipe: Wassail

This recipe comes by request of our friends and courtesy of my Aunt Merry, who made it every year for Christmas while I was growing up.

Now I make it whenever the weather is cold enough to justify drinking cup after cup of steaming hot spiced liquid. Living in Texas, that's not nearly as often as I'd like. And, The Boy would add, I don't make it nearly as often as he'd like. It's his favorite.

Wassail
  • 1 gallon apple cider
  • 1 large can pineapple juice
  • 3/4 cup strong tea
  • 1 tablespoon whole cloves
  • 1 tablespoon whole allspice
  • 2 stick cinnamon
Combine cider, pineapple juice and tea in a large pot. Put all of the spices in a coffee filter and close with a plastic bread tab.

Bring the mixture to a boil, then simmer.


Make sure you take time to scratch the kitty while you let the wassail simmer.
