I tried out a new (to us) recipe from Cooking Light - at just 130 calories per serving with the filling nature of nuts and seeks, it's perfect.
And it's also great as a salad topper.
Sweet Chipotle Snack Mix
(Original recipe here)
- 1/4 c sugar
- 1 t salt
- 1 t ground chipotle chile pepper
- 1/2 t ground cumin
- 1/2 t dried oregano (I omitted this because my stomach can't handle oregano)
- 1/2 t chili powder
- 1 large egg white
- 1 c slivered almonds
- 1 c unsalted cashews
- 1 c unsalted pumpkin seed kernels
