What is a girl to do when she wants both Italian and Indian food for dinner?

Simple - make Chicken Tikka Pizza. Super simple, super fast and relatively healthy.

You can read the original recipe here. Below is my even faster version - perfect for a work night when you arrive home late.

Chicken Tikka Pizza
  • 1 pkg frozen chicken tikka and rice meal
  • 1 pkg flatbread
  • 1/2 red onion, diced
  • 3/4 c. mozzarella cheese
Turn broiler on. Broil flatbread, about 1 minute per side. Adjust oven temperature to 400F. Cook frozen meal as directed (usually around 5 minutes in the microwave). Divide chicken tikka mixture among flatbread, add onion and top with cheese. Bake 5-7 minutes until cheese is melted.
