It's Breakfast Club!

Today was my Breakfast Club day at the office and, true to form, it couldn't have come at a more hectic time. I needed something that was quick to prepare, but also tasty and up to Shannah's Serving Standards. 

Solution? Cook some turkey bacon and make French Toast Casserole. Prepared the night before and popped into the oven first thing in the morning, nothing could be easier.

French Toast Casserole
  • 12 slices french bread, 3/4" thick (you may need fewer or additional slices to fill baking dish)
  • 6 eggs (I used 1.5 c. egg substitute)
  • 1.5 c. skim milk
  • 2 T. maple syrup
  • 1 t. vanilla
  • 1/4 t. sugar
  • Butter (I actually used Smart Balance)
Spray 9x13" baking dish with Pam. Lightly butter bread slices. Place butter-side up in single layer in the baking dish, arranging so bottom of dish is completely covered. Combine remaining ingredients and pour over bread. Turn bread to coat (bread will now be butter side down). Cover baking dish and place in refrigerator overnight.

In the morning, bake uncovered at 400F for 40-45 minutes, or until cooked through and golden brown. If your oven is anything like mine, be sure to rotate the dish halfway through cooking to get even color!

Serve with a variety of toppings: fresh fruit, syrup and a cinnamon-sugar mix.

  1. This sounds wonderful! My niece is coming over for 10 days (after she finishes a month in Egypt) and I am trying to gather simple tasty menus. I can scale this recipe back and make a tasty breakfast treat. Thanks!
