Solution? Cook some turkey bacon and make French Toast Casserole. Prepared the night before and popped into the oven first thing in the morning, nothing could be easier.
French Toast Casserole
- 12 slices french bread, 3/4" thick (you may need fewer or additional slices to fill baking dish)
- 6 eggs (I used 1.5 c. egg substitute)
- 1.5 c. skim milk
- 2 T. maple syrup
- 1 t. vanilla
- 1/4 t. sugar
- Butter (I actually used Smart Balance)
In the morning, bake uncovered at 400F for 40-45 minutes, or until cooked through and golden brown. If your oven is anything like mine, be sure to rotate the dish halfway through cooking to get even color!
Serve with a variety of toppings: fresh fruit, syrup and a cinnamon-sugar mix.
This sounds wonderful! My niece is coming over for 10 days (after she finishes a month in Egypt) and I am trying to gather simple tasty menus. I can scale this recipe back and make a tasty breakfast treat. Thanks!
