Here's a quick and easy meal that uses up leftover smoked turkey that you may or may not have lurking in your freezer post-Thanksgiving.
Not that I know anything about that.
Smoked Turkey Quesadillas
- 1/4 c chopped smoked turkey
- 1/2 c chopped red pepper
- 1/4 c shredded mozzarella cheese
- 1 burrito-sized tortilla
- 1 T hot pepper jam
Place turkey, red pepper and mozzarella cheese in one half of tortilla. Warm in skillet over medium heat for two minutes, then fold tortilla in half. Continue heating for five minutes; flip tortilla over and heat for an additional five minutes or until cheese is melted. Serve with jam for dipping.
