Just a quick idea for repurposing those Girl Scout Thin Mint cookies.
You do have cookies left over, don't you? I'm embarrassed to admit we've had three boxes in the freezer for a year.
I can't explain it. So please don't ask.
Anyway, I've been trying to think of creative ways to use the cookies and found a good idea through Pinterest (big surprise).
And...it was a winner. Here's our fast, easy, perfect for summer dessert treat.
Girl Scout Thin Mint Trifle
- Chocolate pudding (homemade or from a mix)
- 1 sleeve Girl Scout Thin Mint cookies, crushed
- Whipped topping
Put cookie crumbles in a parfait glass, top with pudding and whipped topping. Repeat for a second layer. Mmmmmm......
I think it would be even better with ice cream instead of whipped topping — maybe one layer of chocolate and the second layer with French vanilla. Yeah, that would mean a few more miles of running, but....
