Bring On the Pumpkin

Trying out a Pinteresting recipe for pumpkin sugar cookies...it's time to celebrate fall in all it's pumpkin spicy glory!!

Glazed Pumpkin Sugar Cookies
With my revisions below. As originally published here.
Cookies:
  • 1/2 c softened margarine
  • 1/2 c vegetable oil
  • 1/2 c pumpkin puree {canned pumpkin}
  • 1 c granulated sugar
  • 1/2 c powdered sugar
  • 1/2 t vanilla
  • 2 large eggs
  • 4 c all purpose flour
  • 1/4 t baking soda
  • 1/4 t cream of tartar
  • 1/2 t salt
  • 1/2 t pumpkin pie spice
Glaze:
  • 3 c powdered sugar
  • 4 T water
  • 1/2 t pumpkin pie spice
Preheat oven to 350 degrees. Line baking sheet with parchment paper or silicone baking mat. In a large bowl, stir butter, oil, pumpkin, sugars, vanilla and eggs together until incorporated and smooth. Slowly mix in all dry ingredients until completely incorporated. Scoop 3 T full onto prepared baking sheet and flatten to 1/2 inch thick using the bottom of a glass. If the dough is sticking to the glass, press the bottom of the glass in granulated sugar before flattening. Bake 10 minutes.
  
While cookies bake, stir all ingredients together for glaze until smooth. Once cookies are finished baking, cool 3 minutes on baking sheet before transferring to cooling rack. Spread 1 t glaze over each warm cookie. Let glaze harden 2-3 hours before serving or eat warm with runny glaze.
These cookies are nice and softly fluffy. The cookies' flavor is actually a bit bland, but the glaze gives a nice touch of flavor and spice.
