Leftover Magic: Mint Sugar

So what do you do with leftover mint leaves? Or an overabundance of mint in your garden?

Not that I have a garden...I kill all of my outdoor edible plants.

Back to the mint: Try making mint sugar!

Mint Sugar
  • 3/4 c sugar
  • 1/2 c fresh mint
In a food processor, combine sugar and mint.

Pulse until mint is finely ground and mixture is well combined. Makes 1 cup.

You can also use other fresh herbs, such as basil and cilantro. Try using it sprinkled on fruit salads, on pineapple rings, to rim cocktail glasses or stirred into lemonade or tea.

I recommend that you store any leftovers in the refrigerator to keep it fresh.

  1. I wonder if you could freeze that, like in an ice cube tray?

  2. I would think so - I wonder if ice crystals would have a negative impact though?
